Was inspired by the "side dish" of yesterday's chicken dinner, baba gannouj and brushetta on toast, I found them a bit plain separately so I mashed them together, and it was great! I love the texture and flavour. I had this with grape tomatoes and a little store-bought cup of mandarin pieces in syrup, the tomatoes were already gone by then and the dessert wasn't really home made so I didn't include it lol.
