This is kickass chicken, seriously. All I did was sprinkle lots of club house spicy mesquite on both sides before putting it in the oven at 400 for an hour with a quarter of an inch of water in the pan to keep it from splattering the grease. Sorry I forgot to take the pic before devouring the pretty and delicious crispy skin and digging in, I promise I will next time. The toasts have about an inch thick of baba gannouj(chickpea paste with roasted eggplant, garlic, spices, and lemon) and bruschetta(chopped tomatoes with garlic, basil and oil) on them. Oh, and definitely make sure you have some water left in the pan to make the yummy broth with, you don't have anything to soak the meat in otherwise. I nearly took the teflon off the pan scraping the bits that didn't have any more water lolll.
