Scrambled Eggs with Spinach and Paneer
Ingredients:
1 tbsp. olive oil
1/2 pkg. paneer, cubed (I used
this kind)
3 eggs
splash of milk (optional)
butter
1-2 handfuls fresh spinach leaves
salt
pepper
Directions:
Heat the olive oil in a pan. Throw the paneer cubes in the pan and sprinkle with a bit of salt. When one side of the paneer browns a bit, flip and brown the other side. Remove from heat. Melt a bit of butter in a pan over medium heat and beat eggs with a splash of milk. When pan is warm and greased, add the eggs and scramble. When the eggs are nearly done, stir in the spinach and paneer. Remove from heat. Season to taste and serve.
Cous Cous with Spinach and Paneer
Ingredients:
1 box garlic and olive oil cous cous (such as
Near East brand Roasted Garlic and Olive Oil Cous Cous)
1 tbsp. olive oil
several handfuls fresh spinach leaves
1/2 pkg. paneer, cubed (I used
this kind)
salt
Directions:
Prepare the cous cous according to package directions. While the cous cous is cooking, heat the olive oil in a pan. Throw the paneer cubes in the pan and sprinkle with a bit of salt. When one side of the paneer browns a bit, flip and brown the other side. Just before the paneer is done, throw in the spinach leaves for a minute or so. Remove from heat. Stir into the cous cous and serve.
