So...I was in the Holiday mood and baked a lot of yummy goodies for friends and for myself. I have Chicken Noodle Soup, Bread Pudding, Iced Orange cookies, Chinese Almond cookies, and Golden Oatmeal Raisin cookies. Without further ado, here's a picture before the LJ cut to draw you in :)
Chicken Noodle Soup
Ingredients:
*48-64 oz Chicken Broth (depending on how big of a pot, and I use Swanson brand. I also don't use water unless absolutely necessary)
*3-4 Boneless Skinless Chicken Breasts
*1 carrot chopped
*1 12oz bag of Egg Noodles
*Salt and Pepper to taste
Directions:
1. Put chicken breasts in a medium pot and cover with water. Boil until chicken is cooked completely (usually 10 minutes. Make sure that Chicken is stirred occasionally to keep them from sticking together while boiling.) Remove chicken and set aside on cutting board.
2. In soup pot, pour chicken broth, chopped carrot, and salt and pepper. Bring to a boil over Medium-High heat. Cut up chicken breasts into small cubes (or whatever size you want). Once at a boil, add chicken pieces and egg noodles and reduce heat to medium. Cook 10 minutes or until noodles are tender.
Iced Orange Cookies
Ingridents:
*1/2 c. Shortening
*1 c. Sugar
*2 eggs
*1/2 c. Orange Juice (I used no pulp, but I don't think it matters)
*1 Tablespoon Grated Orange Peel
*2 1/2 c. Flour
*1 1/2 tsp. Baking Powder
*1/2 tsp. Salt
ICING:
*2 c. Confectioner's Sugar
*1/4 c. Orange Juice
*2 Tablespoons Butter. melted
Directions:
1. In a large mixing bowl, cream shortening and sugar until fluffy. Add eggs one at a time, beating well after each addition. Beat in Orange Juice and peel. Combine Flour, Baking Powder, and salt; Gradually add to the cream mixture.
2. Drop by rounded spoonfuls 2 in. apart on an ungreased baking sheet. Bake @ 350 degrees F for 10-12 minutes or until edge begin to brown. Remove to wire racks to cool. In small bowl, combine icing ingredients until smooth. Drizzle or Dip cookies in icing.
Chinese Almond Cookies
Ingredients:
*1 c. butter, softened
*1 c. Sugar
*1 egg
*1 tsp. Almond Extract
*3 c. Flour
*1 tsp. Baking soda
*1/2 tsp. salt
*1/4 c. Slice Almonds
*1 egg white
*1/2 tsp. water
Directions:
1. In a large mixing bowl, cream butter and sugar until fluffy. Beat in egg and extract. Combine the flour, baking soda, and salt; gradually add to creamed mixture.
2. Shape dough into 1-inch balls. Place 2 in. apart on an ungreased baking sheet. Flatten with a fork, sprinkle with almonds.
3. In a small bowl, beat egg white and water. Brush over cookies. Bake @ 325 degrees F for 14-16 minutes or until edges and bottoms are lightly browned. Cool for 2 minutes before removing to wire racks.
Golden Raisin Oatmeal Cookies
Ingredients:
*3/4 c. butter, softened
*1 c. packed Brown Sugar
*1/2. Sugar
*1 egg
*2 Tablespoons water
*1 tsp. Vanilla
*3 c. Quick-cooking Oats
*2/3 c. Flour
*2 Tablespoons grated orange peel
*1 tsp. ground cinnamon
*1/2 tsp. Baking Soda
*2/3 c. Golden Raisins
Directions:
1. In a large mixing bowl, cream butter and sugars until fluffy. Beat in egg, water and vanilla. Combine the oats, flour, orange peel, cinnamon and baking soda; gradually add to the creamed mixture. Stir in the raisins.
2. Drop by level tablespoonfuls 2 in. apart onto an ungreased baking sheet. Bake at 350 degrees F for 12-15 minutes or until the edges are lightly browned. Remove to wire racks to cool.
Bread Pudding: Yields 1 - 8 inch square pan
It's funny how many of my British friends don't know what bread pudding is >.> A conversation with one of them lead to me seeking out a recipe for it. Low and behold, I found the BEST one. This is now going to be passed down to my kids and so on :p
Ingredients:
* 6 slices day-old bread
* 2 tablespoons butter, melted
* 1/2 cup raisins (optional)
* 4 eggs, beaten
* 2 cups milk
* 3/4 cup white sugar
* 1 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.
3. In a medium mixing bowl, combine eggs, milk, sugar, cinnamon, and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture. Sprinkle top with a mixture of brown sugar, nutmeg, and cinnamon for a cruncy topping.
4. Bake in the preheated oven for 45 minutes, or until the top springs back when lightly tapped.
