Would suddenly like to make either buttered rum cupcakes or caramel cupcakes and top them with some version of a chocolate ganache (semisweet, bittersweet, whatever). Decided to proceed with the vegan cupcake plan, and in the simplest way possible. This morning I made another batch of mayo cake, but just subbed in vegan mayo for regular. (I realize I'll probably need to use beet sugar rather than cane in the vegan version, but this was more a test to see if the vegan mayo would work the same as regular.) ( Read more... )
