I have yet to make the Morocan stew as on Thursday, I wasn't feeling up to cooking much of anything. So I made Greek chicken instead. Turns out that Wes didn't have just oregano so I used Italian seasoning instead (hey, it has oregano in it!) and didn't add the onions because we both don't like onions. I haven't met a rosemary that I haven't liked. I made these rosemary veggies with some squash and zucchini. I don't like onions so I left them out but I think I followed the recipe pretty much as written.

Last night, Wes made something called "Saltimbalco" - it's essentially upscale chicken-fried steak except with veal and procutto fried in butter and olive oil. He served it with a fettucini alfredo and some sauted zucchini. Then this AM I had blood tests. I'm sure my cholesterol will come back in the 400s.

I've been wanting to try this maple-syrup and dijon mustard chicken for a while and finally did. Wes thought it was okay as he's not fond of sweet and meat together. Thanks to ptownhiker and fixitup for this one. It's literally 10 minutes and the BEST homemade spaghetti sauce I've tasted. I don't add in the sugar because why does spaghetti sauce need it? I use this as a maranara for chicken or fried eggplant or anything else you would dump a tomato based sauce on because I don't do a lot of pasta. I also just add in onion ( Read more... )

Wesley has nicknamed this Thai soup recipe "Crack Soup". I've made it before with shrimp but he's not a huge fan of shrimp so I used chicken. It's also easy enough that you can throw pretty much whatever you want into it and it comes out nom.
