    An absolutely delightful image of tacos using baked beans, chicken, and bacon greeted me when I flipped my 2011 Betty Crocker calendar to May inspired this. Use your favorite homemade or canned baked beans.

  • Watermelon Mango Salad: Serves 4

    I found this easy to prepare, refreshing salad as a suggested side for a spicy main entree in Cooking Light.

  • Veggie Quesadilla Triangles: Serves 4

    I adapted this recipe from one I found in the grocery. Use your favorite BBQ sauce!

  • 1 plum tomato, chopped
  • 1/2 c corn kernel (thawed, if using frozen)
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 small onion, chopped
  • 1/3 c BBQ sauce
  • 1 1/2 c cheddar cheese, shredded
  • 8 (8") tortillas
  • 2 T cilantro, chopped

    To Serve:
  • salsa
  • sour cream

    Being partial to finger foods, I wanted to go with a tiny pie option. When I looked, all I found was a recipe for "mini" apple pies made in a regular muffin sized tin. So I put together my own bite-sized ones. These can be made gluten free through the use of gluten free flour blend and making sure your other ingredients are also gluten free.

  • The Big Breakfast Burrito: Serves 2-4

    Inspired by a dish I sampled at a restaurant. I just love the combo of black beans and sweet potato. I put a range on the serving size because I generally only eat half myself, but I'm sure there are others who would have no problem polishing off the whole burrito. So adjust accordingly.

    A fun dish I found on a recipe card in the grocery - colorful and flavorful.

  • 4 large bell peppers, any color
  • 1 c fresh tomato, diced
  • 1 c black beans, rinsed and drained
  • 1 c corn
  • 1/2 c onion, chopped
  • 3/4 c salsa - use your preferred heat level
  • 1 c cheddar cheese, shredded and divided - or sub in pepperjack for an extra kick.

    I got this recipe card from the grocery for a delicious dessert. If you use wooden skewers, be sure to soak in water first, about 30 minutes or more.

  • 1/2 c brown sugar
  • 1/4 c rum or 1/4 c pineapple juice
  • 2 t vanilla extract
  • 1/2 t cinnamon
  • 1/4 t chili pepper flakes
  • 1 large pineapple, peeled, cored, and cut into 2" cubes
