Split pea soup is my go to for the Lenten Soup Lunch at church. There's half a dozen of us who make a pot of soup each for the Fridays in lent, so no meat, and it raises money for charity.

And it's mint, not thyme, as the herb. :-)

I do a cold pea soup that has mint in it. It's great in the summer.

The key is to get a good ham hock that isn't too salty. Or at least it is for me. I can always add salt later.

You should try this version - just make sure your ham hock isn't too salty or smokey, unless you like it that way.

My split pea soup is so thick that it can be sliced when it's cold - and that's with no flour added. (It's very filling.)
