2 cups split peas, rinsed
8-10 cups of water
A ham hock or ham shank
½ cup chopped onions
1 cup chopped celery
½ cup chopped carrots
A clove of garlic, chopped
1 bay leaf
1 t. sugar
¼ t. thyme
2 T. butter
2 T. flour
Add peas to water and ham hock. Bring to boil, then cover, lower heat and simmer for 2-3 hours.
Add the rest of the ingredients, except for the butter and flour. Simmer for 30 minutes.
Combine butter and flour and add a small amount (approximate ¼ cup) of soup to mixture to temper it. Mix until smooth and then add to soup. Stir until blended.
Season with salt and pepper if necessary.
