Approaching apogee (or is perigee? ) of the weekend - for a week that seems to have gone quickly in retrospect, each day was a freaking eternity. Roasting vegetables in the oven tonight- we have beets, squash, eggplant and sweet potatoes. I also mushed up various mushy vegetables (cucumbers, green peppers, wilted cilantro and canned tomatoes) in food processor and created a gazpacho-like substance.
