I have successfully started making my own pita bread, complete with pocket. Its actually quite simple. It's a simple 50% hydration dough with some sugar and olive oil incorporated.
After one rise you form it onto 8 little balls and let them rest for 20 minutes.
Then roll them flat
Meanwhile heat the oven with a baking stone to 450. When it is hot put the rolled out dough on the baking stone and bake for 6 minutes.
I have a video of the pita baking but I can't figure out how to load it. Check back later it's way cool!
