Well, personally I like to step outside the box a little. I'm experienced with soufflé of any variety, crème brûlée, dessert mousse, tarte tatin... Are you considering simply baking, or do you have a meal in mind?

The black forest torte can be a bit complicated but once you've made it a couple of times it'll be easy. Fresh pastry's better for pumpkin pie but you can use puff pastry just as easily. I can give you the recipes if you want.
