Hong Kong summers. What can I say about them? The other week it was so hot that literally ... and I wasn't joking! The battery in my TV remote control melted. I have never had this happen before. It was shocking to say the least.
And today? Typhoon warning, followed by a monsoon rain warning. It was raining so hard today that umbrellas are useless. So, getting off work and heading home without going to the grocery store, I needed to see what was in my kitchen to make for dinner. Luckily, I had a package of Italian sausage, some fresh basil and a can of diced tomatoes. So, I made myself pasta with tomato sauce. Not bad.
Serves 2
Ingredients:
Fusilli pasta (or any pasta of your choice)
3 garlic cloves, minced
3 shallots, sliced
1 can of diced tomatoes
2 Italian sausages
fresh basil
1 tbsp dried basil
1 glass of red wine
grated Parmesan cheese
1 dried chili pepper, crushed
salt and pepper to taste
Directions:
1. Remove sausage casing and crumble.
2. Heat a pan with olive oil and brown the sausage.
3. Add shallots and garlic.
4. Add can of tomato, dried basil, dried chili pepper and red wine. Let the alcohol cook off.
5. In a pot of water, cook pasta to al dente.
6. Add fresh basil to the tomato sauce. Season with salt and pepper to taste. As the pasta is cooking, let it simmer until pasta is done.
7. Drain pasta and toss it into the tomato sauce until covered.
8. Serve with a bit of grated Parmesan.
Hopefully the weekend will be nice. At least the rain seemed to have stopped.
