And since today is your birthday, I decided to buck up and try out the cake mix I bought from Muji a little while ago. Muji, the minimalist Japanese lifestyle store that I love so much has a little section of instant food type things. Everything from mango lassi to sweet potato scones to macarons (like
this guy made). All in pretty minimalist boxes of instant mixes. I was curious. I did try the gingerbread house last Christmas that didn't work out. I finally figured out what was wrong. It wasn't butter the boy gave me. It was vegetable shortening. And a little too much of it as well. So, this time I bought the cake because it looked so pretty.
The entire set comes with a large package of flour and baking powder all mixed together, a package of cocoa powder, candied lemon, crunchy nuts, white frosting pen, a paper cake pan and six small plastic bags and ties to give to your friends and loved ones after you are all done. All you provide is 3 tablespoons of milk, one egg and 30 grams of butter. It's designed for a typical Japanese girl who just wants to make cute gifts for whoever and only owns a toaster oven. Like me. Though I'm not Japanese but I have only a toaster oven and my flat is pretty much the size of a Japanese apartment.
The instructions were easy and gratefully translated in English. Melt butter in a microwave. Preheat oven to 160C. Mix one teaspoon of melted butter with the cocoa powder in a small bowl and pour it into the bottom of the paper cake tray. Whisk the rest of the butter and egg in another bowl. Fold in the flour package until pale. Mix in the candied lemon. Pour mixture on top of the chocolate layer. Place on a baking tray and bake for 30 minutes. Let cool. Peel off the paper cake pan. Warm the frosting pen and decorate. Add the nuts on top.
It didn't look as nice as the picture on the box but surprisingly, it tasted quite moist, lemony and chocolatey.
The last step is to slice up the cake, put them in the little bags, twist tie and give to the ones you love.
