Surprisingly tasty kitchen experiment:

Chicken breast + mesquite seasoning. Grill until it's mostly cooked - no pink in middle etc. (Did I mention my Foreman grill is my friend?)
Slice some cream cheese, put that on top of it; then put sliced cheddar cheese on top of that. Bake at 250-ish, just long enough for the cheese to melt.

The wonderful thing about Italian food is that when you get away from the more extravagant recipes, you get things you can make off basically a bunch of cheap, easy-to-keep-around ingredients.
