I've been obsessed with my homemade soup recipe. It's super easy and super healthy and you can get full on it without having eaten a ton of calories.
Here it is -
Put 2 cans of low sodium chicken broth into a big pot. Add 6 cups of water.
Chop up about 4 carrots, 4 sticks of celery, and 1 onion and put them in the pot. Add a bay leaf, some pepper, and some salt to taste. Add in a dash of thyme, rosemary, and a lot of parsley. I personally like to add Bragg's aminos for a salty flavor.
Put on high heat. After it starts to boil, add 1 big skinless boneless chicken breast. Boil 20 minutes.
Take out chicken & shred. Add back to the pot. Add in 6 oz whole wheat pasta (I like shells) and some fresh diced mushrooms.
Boil for about 10 minutes, or however long the pasta box says. Add in a bunch of fresh baby spinach. After the spinach welts, add any more salt/pepper that is needed and it's ready to serve. :)
