My photo of the Mushroom, Spinach, and Turkey Lasagna
Steve's Mushroom, Spinach and Ground Turkey Lasagna recipe I made this lasagna last night.
Not quite by the recipe, but close... My first lasagna and DAMN it was good!
At first Jeromy was saying that lasagna should be meat and cheese only, what's with adding mushrooms and spinach and GOOD for you stuff?! But he said it was great!!
Everything tastes good if you throw cheese on it. :o)
I had a slice for lunch today - partially warmed in the microwave, then put it in the toaster oven to heat it the rest of the way. OMG, still yum.
So here's what I did differently:
- Instead of an onion, I used frozen onion and pepper (red and green) mix. I think the peppers added a good flavor to the recipe.
- I used one 10oz frozen spinach (defrosted) instead of fresh spinach. I think next time I'll add more too. I also added it to the ricotta mixture.
- Didn't have celery - I don't care for it much, so it usually goes bad - so I julianned and chopped up one large carrot. I sauteed this with the onions.
- I didn't measure anything really
- The ground turkey I thought I had was actually turkey cutlets, so instead of running out to the store and ruining my cutlets, I dug out my meat grinder attachment for my kitchenaid mixer. Haha. Gross but fun. I'm pretty excited that I can make "ground" out of pretty much anything now. :o)
- Lastly, I accidentally layered it wrong, but I don't think that matters too much...
It is one of my resolutions to start trying new recipes. I think I got stuck in the "what's quick, I'm hungry" when I was commuting an hour and a half each way for work, that I forget that I can actually try new things now! It's still hard, with Jeromy working third shift, to cook every night. I think each week, either Saturday or Sunday nights, I'll cook one big thing - freeze some, eat some, and save some for leftovers for the week.
That's my plan. We'll see if I stick to it! ;o)
