Southern Style Veggie Chicken Biscuit

It's hard to remember why I was not a breakfast person years ago.

Just because I had an cast iron stomach, I felt like I didn't need to have breakfast. I could skip right to "the good stuff" you would have for lunch or dinner.

I will never forget the looks I got the time I had a chili dog and coffee at about 8am, while the other trucker types were having hash browns and eggs.

Unfortunately, that was one of the few times I pushed even my galvanized stomach a little too far.

That was years ago.

Somewhere down the line, I lost my taste for Spaghettios first thing in the morning.

I think what brought me back to breakfast was a combination of a terrible constipation incident brought on by eating too much Asiago cheese (yes fiber is good thing), and re-discovering how delicious cereal was when it was given to me as a charity gift when I was poor and hardly eating.

Now most days, breakfast might be my favorite meal.

Whether it is just bowl of cereal or a good hearty breakfast.

I love it so much, and it is affordable and satisfying on a budget, that many days I have it twice.

Until he reminded me, I had forgotten all about "second breakfast".

Today I had both styles of breakfast.

First breakfast was granola, and the delicious shake at the bottom of a box of Honey Bunches of Oats.

Second breakfast I made a southern style veggie chicken biscuit, with biscuits and honey on the side. And DAMN was it good.

My inspiration was McDonald's southern style chicken biscuit.

Which I LOVE.

McDonald's breakfast is the only thing I really like from them, aside from the occasional craving for their fries. The rest is McCrap.

However, they come at $2 a pop and are pretty small.

Also, you can taste how bad they are for you. So salty and buttery. It's definitely something I only indulge in as a treat.

It helps that most of the time, I am not motivated or awake to get to McDonald's before breakfast is over, despite them being around the corner from me.

Who would think sometimes being lazy could be good for you?

Well, I decided that I could make my own chicken biscuits for much cheaper.

These days I do that a lot. I get ideas from other people's creations then make it myself, sometimes better than the original.

The first time I tried, I used some of the boneless chicken at work and a Pilsbury biscuit.

It was pretty good, but the chicken was a bit too dry. I could have tried buttering the biscuit like McDonald's does, but the chicken was still off.

This afternoon I got it right!

I used Pilsbury biscuits, the "Buttery Tasting" ones, and Morningstar veggie chicken nuggets, and it was perfect!

Not as buttery or salty as McDonald's, but I think it tasted more real, in a good way. Like I said, I could pour melted butter on the biscuit halves for the butter effect, if I wanted to.

The veggie chicken is perfect because it is more moist, and has all the benefits of "syntho" meat but you actually know what it is, and it is much better for you.

Of course, this isn't a light meal at all, but it has to be better for you than the McVersion.

And I only paid about $3 for a box of veggie nuggets and $1.50 for the small tube of (5) biscuits.

For two McDonald's chicken biscuits, I pay $4.

I haven't sworn off theirs by any means, but this seriously rocks.
