Things I have discovered about crème brûlée:

• The custard is refrigerated, not baked
• and in rapidly warming custard, brown sugar will sink.
• To use a deep cup is hating
• as flame will go up the matchstick, not down to the dessert
• It is very tasty

jelashke and I have been cooking and baking more than we usually do. Many good and nourishing things have come out of this; some terrible acts of the deepest, darkest evil have also betrayed our counter.
