This morning for brunch with the hubby I decided to try something a little bit different - I got out my Belgian waffle iron and made us each a nice, fresh, toasty brown waffle. But that wasn't the different part - I also cooked us up some Bananas Foster type topping: butter, brown sugar, maple syrup, vanilla extract, pecan pieces, and three sliced bananas, cooked until the bananas are nice and soft. Yum!
Not a very healthy topping for a diabetic, but delicious! I also served up a few slices of bacon for protein. Nom!
This evening we are heading over to
minikin's place for supper. She is planning on serving up some black bean tortilla roll-ups, and I'm bringing a side dish. I found a recipe on my AllRecipes app that looks simple and delicious: Herbed Corn. It's basically frozen corn simmered in a saucepan with some butter, minced fresh parsley, a bit of dill weed, garlic powder, Italian seasoning, salt, and a pinch of dried thyme. I think it will go well with the black beans. I also have some fresh strawberries that I will slice and bring over as a dessert, along with an Angel Food cake and some whipped topping. Simple and delicious!
Not much else is on tap for the afternoon other than a quick trip to the grocery store. Kara has been healing well and has been released from her confinement. She is currently napping in her kitty bed.
I could use a nap too, but instead I think I'll just read a book and/or play around on Facebook!
