ugh, Monday. You know, usually I don't mind doing temp jobs, mostly because I know they will end, heh. But today I was feeling yucky, and I was grumpy, and my back and shoulders started hurting the moment I walked in the door. And to top it off, my super Excedrin was not working at all.
Oh well. Anyway, today I want to type about my favorite miso recipe. Miso is a food that I had never tried until I after I went vegan. Just one of the small joys of vegan-ness: exploring new foods!
This is my current favorite flavor of miso. This is a "golden" miso... The darker misos are salter (or maybe heartier), while the lighter misos are sweeter. I've tried a "brown" miso, which I didn't like as much. I've not eaten any "white" miso, yet.
I cook up a cup of pasta, with a dash of vinegar and a tiny bit of vege base. When it's done, I add a bit more water (for however "soupy" I want it), a rounded spoonful of the miso, a tablespoon or two of Canola oil, a dash of soy sauce (currently Braggs) and some organic ketchup to sweeten it up. Then I add some frozen peas to cool it down so I can eat it right away!
So yummy. I eat this almost every day! But then, I do tend to get stuck on certain foods for a while. For years I put broccoli in everything... but now I don't eat broccoli at all! ha.
