I think it's a mixture of interesting, suitably flawed characters, the dialogue which is non-standard without it sounding like old people trying to write slang (by inventing it's own slang and modifying the sound of Valley Girl, but it worked) and the mixture of the fantastical with the very real, for instance, Buffy taking mock SATs while on patrol.

It gave the audience something to hang on to while they got used to the universe and made the characters more relatable.
