Deja vu all over again!

There was surprise!Powerpoint yesterday afternoon and then again this morning. Complete with someone (not my boss) standing over my shoulder and waffling over whether something should be in 24 pt or 22 pt type. It was like being back with G. at BEMC again! I don't mind doing it, but when yesterday the decree was 24 pt and this morning it was "I thought we decided everything should be in 22 pt," I might get a little testy. I try not to show it though. *grits teeth and smiles*

I enjoyed the Rocky Horror Glee show music, bowdlerized as it was, though I still think Will Schuester should be set on fire endlessly. I have fond memories of RHPS from high school, though, so possibly that lent it some good will.

In between Glee and The Good Wife, I made oven baked apple doughnut muffins, though since I had no apples, and no desire to run out to buy any, they are more like nutmeg & cinnamon muffins. Also, I think the reason they were so quick and easy was that there was no peeling, coring, or chopping of apples to be done. That always takes so much longer than I expect. I just added a splash of apple juice (not too much, because I didn't want to upset the dry/wet ingredient balance), so there is a hint of apple flavor, but the nutmeg and cinnamon kind of overpower that.

I didn't want to get hung up in deep frying - I have nothing against the process, but it is a process, so these doughnut/muffins were the way to go. They're easy to mix up without a mixer - and I don't mind getting my hands in the bowl and rubbing the butter and flour into crumbs. I find it therapeutic sometimes, to be honest. - and you bake 'em in mini muffin pans.

One tablespoon of batter per muffin cup (also, spray the spoon with Pam or whatever and the batter just slides right off):

Then I dipped them in melted butter and cinnamon sugar:


The recipe made exactly 24 mini muffins, so I kept six - two for breakfast today, tomorrow, and Friday, and brought the rest to work:


They are all gone now. everybody loves mini muffins!
