mediterranean salad with falafel croutons and tahini dressing

Its been a week since we've had falafel and we are already craving it again. I had some falafel mix at home but no pita bread. I decided to make a salad with romaine lettuce, plum tomatoes, english cucumber and red onion PLUS tiny falafel balls, no bigger than a crouton, lightly fried in a combo of canola and olive oil. I drained and cooled the falafel before adding them to the salad.
The dressing was amazing. It had 1/4 cup of tahini, 1/4 cup olive oil, 1/2 cup of water, dried mint, garlic and salt (all three to taste, I added a heaping 1/2 teaspoon of each in our dressing) combined until smooth. Then a 1/4 cup of fresh lemon juice and a pinch of natural sugar was whisked in.
