Squash Casserole

I made a squash casserole today. I'm not a big fan of casseroles, but I think that's only cuz I haven't ever had a really good one, yet.

Today's dish included Safeway organic rosemary-garlic crackers (~20) that David crumbled for me, butter (~1/4 cup), cheddar cheese (~1 cup), salt, yellow squash (4), 1 egg, 1/2 c milk, lots of garlic, and water chestnuts. I mixed everything up, sprinkled on top with leftover crumbs and cheese, and baked at 400 for 25 minutes.

It was just OK.

Definitely would have been better with meat.

Interesting way to incorporate veggies in the diet though. Unfortunately, the butter, cheese, and crackers made it almost not worth it.

Would be a good potluck dish, I guess.

I will probably never make it again.
