Breakfast:
Van's Glutten free toaster waffles-AKA via M. "Dented, vegan spelt cakes". All the more for me :) And they were just as good as I remembered.
However- My first use of the toaster oven was dismal. I unboxed it, plugged it in, unwrapped the metal racks, put them in etc...I'm on the phone with a friend when I start to smell that chemically plastic smell. I figure that it must be the newness of it and ignore, of course it gets worse and I can visually see fumes wafting out of the vents. Not good. I open the door and see for the first time that the very very bottom-UNDER the heated coils there is a tray, that is shrink wrapped...and melting.
What the heck? Seriously? You put ALLL 4 other "parts" to the oven wrapped SEPARATE from the oven, so it is clear I must unpack and place inside but the ONE pan Delongi puts in from the start, is wrapped front to back in plastic? What were they smoking?
Thankfully I was able to pull it out with some tugging despite it already starting to stick to the insides. As best I can tell I got it all out.
Lunch:
Plaintain chips, dried apple rings, collard greens and left over tofu black bean dip
Dinner: To be determined. CSA pick up day thankfully so lots of fresh veggies in the house.
