The parmesan-encrusted tilapia* was a near-total success! The only dissenting vote came from Middle Child who decided yesterday afternoon (when she heard we were having fish for dinner tonight) that she wasn't going to like it.
*rolls eyes*
She chose to give up going to her friend's house after dinner, dessert, and (per Butthead) popcorn for a week in lieu of actually eating the 2 oz of yummy food I put on her plate.
Sulking, scowling, glaring and grumbling were her gifts to us.

In any event,
here's the recipe I used:
3 tilapia filets
1 egg
1 Tbsp water
1/4 cup unsalted butter, melted
1 Tbsp unsalted butter, cut into 3 - 4 pieces
1/2 cup panko bread crumbs
1/4 cup finely grated parmesan cheese
1/2 tsp paprika
1 lemon, cut into 8 wedges
Preheat oven to 325° F (163° C) and grease/spray a glass baking dish.
Pat the filets dry.
Beat the egg and water together.
Mix the melted butter, bread crumbs, parmesan cheese and paprika together.
Place the filets in the egg mixture first, then dredge in the panko/cheese mixture. Put the filets in the glass baking dish, then put one piece of butter on top of each filet.
Bake for 12 to 15 minutes. Fish is done when it's opaque and flaky; do NOT overbake.
Serve with lemon wedges, green veggie and rice, orzo pasta or couscous.
