[recipes] pine nuts in cookies...

I'm planning on making these for my coworkers on my last shift. I hope they're as good as they sound...

pine nut butter cookies
  • 100g semisalted butter;
  • 100g caster sugar;
  • 50g demerara sugar;
  • 1 large egg;
  • 250g selfraising flour;
  • 100g pine nuts.
Preheat oven to 180C. Line 2 baking trays with baking paper. Beat the butter & both sugars together until creamy. Beat in the egg, then add the flour & the pine nuts. Mix with your hads to help distribute the pine nuts evenly.
Shape into 20 walnut-sized pieces & put on the baking trays, leaving plenty of room to spread. Flatten with a fork & bake for 12 minutes. Leave to cool on the tray for 5 minutes, then transfer to a wire rack until completely cold.
Makes 20.
Ready in 25 minutes.
Per Serving: 145 calories, 18g carbs, 8g fat, 3g saturated.
