Ianto, as always, is pleased to find himself in Milliways, and takes a seat at the bar, anticipating an endless cup of coffee and a night of good talk.
The napkin that pops up is no surprise, though. He reads it and nods. "Absolutely, I can do that."
He goes behind the bar and thinks for a moment, then writes on the specials board:

Good thing it didn't occur to him to actually say anything other than, "Hey, Ianto," as he puts down a mug that is, as always, conveniently empty for Happy Hour.

Possibly he is wondering how to make 'coffee' into 'sake' without Ianto noticing.
Possibly he is very sure he could pull it off.

Urahara does so like certainty. Even if it's only on his own terms. Makes the game so much more fun that way.
