and top with Sprouts and Raw Sunflower Seeds or Sliced Almonds.

Roasted Tomato & Zucchini Soup

10 Roma Tomatoes
2-4 Zucchini cubed
8 ounces of Tomato sauce
1 large Onion, minced
I Green Bell Pepper, diced
1 stalk Celery
1/4 cup diced Carrots
1 bulb Garlic, roasted
1 tsp Smoked Paprika
1 sprig fresh or 1 tsp. dry Thyme
5 Leaves of fresh Basil, Chiffonade

You can puree the soup of your choice, strain it through a sieve, warm and pour into little shot sized serving glasses.   Garnish with a dash of Creme Fresh &/or a fried Sage or Basil leaf.  Basil for tomato based soups and Sage for squash or root vegetable soups.
