First vegetarian family dinner

Tonight was a first! I made an vegetarian meal for my family. Well, I'm sure we've had meatless meals before, but this was meatless on purpose. It was super! :D

I made baked potatoes, corn on the cob, quinoa with garlic and vegetable broth, cheesy rice, and... the best dish of all! Baked zucchini slices breaded in wheat and rye bread crumbs and parmesan cheese, cherry tomatoes, and warm marinara sauce on the side. That came out epic, it was all gone.

My mom never had quinoa before. The whole meal came out perfectly, and I was really happy! It showed her that being a vegetarian doesn't mean you only eat dull stuff like rice and salads. We were all stuffed after that hearty and flavorful meal. It was balanced and healthy. It was also cool because I've never really cooked before. As of late, I have to cook stuff because it can get dull if I don't.

So yay for tonight's dinner! :D It was a delicious, educational experience for all.
