My version, original wanted a hell of a lot more sugar!
Measurements are rough, I used a mug in place of a 'cup' and I don't care!! ;p
Generally I go over on the fruit measurements, under on sugar/butter, but work to personal taste.
Rhubarb bars (rhubarb crisp)
Fruit
3 Mugs of chopped Rhubarb
2 Chopped Apples (Granny Smith) (Not necessary but I was a little under with the rhubarb...)
3/4 Mug of Sugar
1/2 Mug of Water
Splash of Vanilla Essence
2 tbsp of Cornflour
Juice of 1 or 2 Oranges
1 Mug Blackberries (Blueberries/Strawverries/Raspberries - whatever you like/have)
Crisp
1 1/2 Mug Oatmeal
1 1/2 Mug Flour
1 Mug Brown Sugar (but under that)
1 Mug Butter (or an alternative)
1 Mug Chopped Nuts/Mixed Seeds/Dried Cranberries (mix of whatever was on the shelf!)
1 tbsp of syrup
Cook
Cook fruit mix until fruit softening and syrup thickening. I waited until thickened to add the soft berries.
Mix the crisp mix into a crumbly mixture.
Layer roughly half the crumble onto a greased dish.
Scoop fruity syrup over the top, then add remaining crumble.
Bake on 200degrees for 30mins
Once cool cut into bars
Nice as breakfast/snack bars or served warm with a dollop of yogurt/ice-cream.
