I created genius tonight!!!
So one of the students in the cohort ahead of my class has allergies to gluten & egg so I committed myself to making an allergy friendly cake for her and the handful of folks in my cohort that have ground nut, gluten and dairy allergies. GF/DF Seafood Chowder
Used what I had on hand in the house and made some seafood chowder the other day. It ended up being extremely tasty and served our family of 6 for two meals! I tried my best to keep track of what and how much went into the pot but keep in mind that I keep tweaking as I cook until it tastes right... so feel free to make adjustments of your own.

Feeding the family
Feeding a family our size is difficult on a tight budget but when you add in the nutritional considerations of someone who has had gastric bypass and two individuals with food allergies/sensativities it can be a nightmare to the pocketbook. [Recipe] Bacon Potato Chowder
Today I was inspired by a recipe I saw on this blog called the Gluten Free Homemaker, stopped at the store to get the missing ingredients, and came home and experimented with it for dinner this evening. [GF Dining] Yummers 2 the 3rd Power, Parkland WA
