Tonight's cookout was a big success. Definitely one of my best grilling adventures.
Above you see the skewers, brats and the foil-wrapped potatoes in the background. Pork was definitely a good meat for skewers. It cooks quickly enough that it doesn't take forever and overcook the veggies (this can be a problem with steak) but not so quickly that it dries out and gets tough (a problem with chicken). I marinated it for about half an hour, cut up in a plastic bag, with some ordinary store-bought Hawaiian marinade. It was tender and delicious.
The potatoes were really yummy and super easy. Here's the recipe.
4 baking potatoes, cut into 1/4-inch slices (cubes would work fine too)
2 small onions, cut into rings
3/4 cup mayonnaise
1/2 cup grated Parmesan
2-3 minced garlic cloves
1/2 tsp each salt and pepper
1 tsp paprika
butter
Mix up the dressing, toss the potatoes and onions to coat. Make foil packets with a double layer of heavy-duty aluminum foil. Dot with butter and seal up (I made three packets). Place on medium heat for 30-35-minutes, turning fairly frequently. Be sure to spray the foil first with cooking spray. The outer potatoes will get browned and crispy.
If anything, when I make it again I'll use more salt.
