Roman Tunics

I'm making Roman tunics for a friend and soon the spouse. The kind that are basically a pillow case with a slit for the neck, sleeveless, and bunched at the shoulder.

1. Where exactly should I bunch the shoulder together? I made the tunic and had him put it on and bunched at what I thought was the logical spot - at the end of the neck slit to the edge of the fabric. The shoulder looked great but the neck bunched up at the back and was taught across the front. Just didn't look right. So I retied the shoulders further back and it looked much better, both the front and the back laid better, but the neck line was no longer straight, it was more like a U. Is this OK?

2. Are the shoulders sewn? Or does the wearer pin or tie them every time?

3. Would raw silk be appropriate or should we stick with linen?
