The dessert turned out yummy! It has Jane's approval! Yay!! So here's the recipe, if anyone's interested. No baking required! It's quite simple!
Peach dessert thing!
crumbled cookies for crust (no set amount, just do what looks right to you)
2 eggs
3/4 c. butter (1 and a half sticks)
2 c. powdered sugar
4-6 ripe peaches
strawberries (optional; you could use other fruit as well)
Cool whip (the smaller sized container should be enough)
9x13 pan
Crush cookies and cover bottom of pan with them.
Cream together eggs, butter and sugar.
Spread mixture over crumbled crust.
Peel peaches, slice, dip in lemon juice and drain.
Place peach (and strawberry, etc) slices on top of creamed layer.
Cover it all with whipped cream.
Refrigerate overnight and enjoy!!
Notes:
-I forgot to do the lemon juice part, but since the fruit was buried under whipped cream it wasn't exposed to air so it didn't turn brown or anything.
-I added a 1/2 tsp. vanilla to the egg-butter-sugar mixture. I don't know if it made much difference but it just felt like I ought to add something more to it.
-The original recipe called for graham crackers and hydrox cookies for the crust, but I used vanilla wafers because I like them better. I used Mi-Del gluten free pecan cookies on one side of the pan because my family members have allergies and I wanted them to be able to enjoy it too! They're really tasty cookies, though a little pricey (but isn't that always the way...).
-Refrigerating overnight is important, because otherwise the middle layer is gonna taste like exactly what it is: buttery sugary eggs. Which is kinda weird and doesn't exactly taste like something you ought to be eating. Letting it set overnight gives the mixture time to blend together and soak up all the flavours.
-Obviously, it's a pretty simple, open recipe, so you can add or change things to suit your own taste. I was thinking it might also be good with a pudding-ish sort of filling. Mmmm... how I love pudding...
Sorry, twins, it's all fresh, whole fruit for this one. Though you could probably do a layer of puréed fruit instead of slices, if you like. Actually, that sounds good too... I may be making variations on this dessert again...
Other news... still rereading Kaze Hikaru. Every time it gets me, it gets me really bad. I cheated and peeked at a few scans from upcoming volumes and now I reallyreallyreally wanna read moooooore~! Volume 14 is already special-ordered at my bookstore, so I'll get it as soon as possible, but that's still not till Auguuuuuust~! Oh, poor Lys.
Also, I got to visit the GVSU archives, which is a library at my old college with lots and lots of old/rare books that they don't let circulate normally but will allow you to come and look at in the building. I went with the children's book illustration class and we looked at all these beautiful old books illustrated by Arthur Rackham♥ and Beatrix Potter♥♥ and Kay Nielsen♥♥ (the guy who worked on Night on Bald Mountain in Fantasia) and Jessie Willcox Smith♥♥♥, and old magazines they published for kids with serialized stories and the most amusing advertisements, and these incredibly adorable picture books by Clare Turlay Newberry who painted the most darling fuzzy little kittens you've ever seen, and also had a really funny looking book about a girl with a pet lion (illustrated in a quite different style, but still quite charming), and many other lovely pretty things. I really need to buy a book of Kay Nielsen's work, as it is just lovely~~~ (I already have a wonderful book of Jessie Willcox Smith's illustrations (and of Beatrix Potter's, which I haven't even read all the way through yet!) It was a good visit.
So now I gotta decide if my bedtime story reading will be cute bunnies and kittens, or cute Shinsengumi adventures. *laughs*
