Its finally over!!!!

  The four day heat wave finally broke, thank god, its been hitting up to 100 F all this week on the East Coast. Today was the last day hopefully. Temp dropped to 70 degrees at 8pm, so to celebrate I'm making a simple soup. Its basically Three Bean type but not because there four types of beans in it.

Three(/Four really) Bean Soup
  • 1 Medium or Large White Onion, Chopped
  • 2 Cans White Beans
  • 1 Can Kidney Beans
  • 1 Can Pinto Beans
  • 4 Cup Chicken Stock
  • 1 Cup Water
  • 2 Tb Veg Oil
  • 1 tsp Chili Powder
  • 1 tsp Cumin
  • 1 tsp Ground Thyme
Garnish with shredded cheese, chopped scallions and hot sauce

So I made ten/eleven cups of chicken stock the other day and was wondering what to do with it before I place it into the freezer by Tuesday. Also my stock was thick so I added a cup of water to this and I had only four cans of beans of different color/type, so I ended up using one of EACH of the following: Cannellini, Small White Beans, Black Beans, Dark Kidney Bean. Also I used one Celery stock/rib/whatever its called and chopped it.
  1. In a Large Pot, heat the oil Medium to Med-High heat.
  2. Add chopped Onion and celery, cook for 5 minutes, stirring occasionally.
  3. Stir in spices, with a dash of Sea Salt and Black Pepper or to taste, and cook for 2 minutes.
  4. Add the beans and stir well for 1 minute.
  5. Turn temp to HIGH and add the stock and water, bring to rapid boil and hold for 3 minutes.
  6. Reduce heat to LOW and cover, and let cook for 10-15 minutes
  7. NOW this is optional, Puree 1/2 or all the soup, return to pot and let simmer
I don't know about you but I have picky eaters, one person doesn't like onions with they can identify or taste onions, two don't like meals that don't have any meat of some sort. Then another doesn't like bbq type meals or having chicken more then 2-3 times a week. So I'm still trying to figure out what to cook for each month as I go on a $250 a month for five people.

I had three serving of this to try it plain, with cheese, and cheese + hot sauce; plain was good but I thought it taste like a thin out refried beans made to look like soup, cheese was good too, the cheese and hot sauce was good also.
Also as I was getting up to put it away I found two family member also had a serving of the soup; one thought it was good tasting but said she looked around to see if I toss any chicken into it also because of the strong chicken flavor stock, said she would be happy to have again. And the other thought it was good too, especially because she didn't taste any onions in it. The other two didn't try any because of the time: one was asleep in bed or in the prospect of going to sleep and the other was full from his meal that he made for himself at 8, but that was about three plus two cups that I ate that had some with about 4 cups left of the soup.
So tenably makes 6-9 servings
