LJ, what cookbooks would you recommend for a vegetarian? Currently I'm considering getting Mark Bittman's How to Cook Everything Vegetarian as we have the original How to Cook Everything and I think that's been pretty great so far. (On the other hand, it is a pretty giant book to take.)

I suspect my internet will also be limited to whatever I can get with a wireless USB modem thingy, so I would prefer to have something offline to consult.

My sister recommends a Moosewood cookbook but I'm pretty sure I'm unlikely to cook most of the meals in those books. The only recipes I've really been tempted into trying were the muffin ones, and though good, I'd like something a bit simpler for workday meals. I'll be on my own, so I'd rather not have to deal with extensive ingredient lists.

I like Nigella Lawson's books, but they tend to be meat or dessert heavy and I don't really want to take a book where there are only a couple of recipes that I use. I could photocopy some of the pages I do want, I suppose...

Any recommendations?
