Spinach Pancakes Recipe

This recipe was pretty tasty especially when you make them thin and crispy. I'm not a huge fan of eggs though.

Spinach Pancakes:
4 tbsp flour
2 eggs
1 10 oz. pkg frozen spinach, thawed and drained
1/2 tsp paprika
salt and pepper to taste
2 tbsp light cooking oil

Mix flour and eggs in a bowl. Stir in spinach, season with paprika and salt and pepper.
Heat oil in large skillet. Drop mixture by the spoonful and flatten into pancakes. Cook until browned on both sides. Drain on paper towels and serve warm.

This made about 7 small-medium size pancakes. Enough for 2-3 people as a side dish.
