So this song is about this cowboy who is trying to catch and tame this wild stallion and EVERYTHING makes me think of J2 right now, so I thought:

Okay.  Jared's this cowboy (post civil-war, but not by much) who is wanting to add horses to his struggling cattle ranch.

Problem is, he has no credibility and no stock and not much money.

I can't believe I'm enabling your crack habit, but here goes...

An evil enchantress (enchanter, whatever) cursed him. Or he's a were-being. Or it's an AU in which the taming and branding wild animals grants them humanity, or just a few very special animals, maybe that's what Jared actually went up there to do, but the reader doesn't know it until they're in each other's arms.

Yes, it's all been done before. It's a MacGuffin (and, yes, I expect you know what a MacGuffin is, but read the entry carefully; all that's important is that the characters accept the situation, then the readers will too).

Some sort of spell? A curse? Maybe he messed with the wrong person, or a family member did and Jensen paid the price. You can always write both firefighter!Jensen and horse!Jensen. I promise you, no one'll complain about two different storylines going on. *g*

Okay, so why is Jensen a horse... It's post Civil War, right? If you wanted to go with dark-fic, maybe his family owned slaves so he was cursed to live as an animal until someone owned him. Or there's always the tried and try "pissed off a witch" reason. Or give him a Native American curse. Maybe he has to live as his spirit animal until he finds true love. I don't know. I could go on and on. Brain storming ideas for crack is always fun.
