Ameinwonderland requested for some vegie recipes that I think she'll enjoy. Feel free to try the recipes, even if they're all casserole. ;D
TOMATO CASSEROLE: (i modified the original recipe)
ingredients:
one loaf of sliced white bread (actually any bread will do)
choice of cheese (in slices or grated)
4 - 12 eggs (depending on the size of your baking dish)
2 - 6 cups (one cup for every two eggs)
2 - 4 16oz. cans of stewed sliced tomatoes (again depends on the size of dish)
salt and pepper to taste (other spices can be used too. I used basil)
Grease baking dish, layer bread, then the cheese, and then the tomatoes. You have the choice of including the tomato sauce in the can, but I did. Repeat so you have several layers of bread, cheese, and tomatoes. In a bowl, beat eggs, add milk, salt, pepper, and other spices. Pour egg mixture onto the baking dish with the layered bread-cheese-tomato. You can add as much as you want, but I added until half of the layers were covered. Batke at 325 degrees for 30 minutes. One indication that your casserole is cooked is that the bread looks crispy or the egg mixture has finished bubbling.
FRESH VEGETABLE CASSEROLE:
ingredients:
3/4 lb. sliced mushroom
3/4 lb. sliced carrots
1 oniion, sliced
1 tomato, sliced (i thik you'll need more if you have a big baking dish)
1 tablespoon butter
1 tablespoon flour
1/2 cup sour cream
juice from half a lemon
salt and pepper to taste
1.5 oz. brandy
1 tablespoon cut parsley
Layer mushrooms, carrots, onion, and tomato. Make a sauce using butter, flour, and sour cream. Add lemon juice and brandy to cream sauce. Pour over vegetables. Add salt and pepper. (i think you can add them to the sauce mixture before pouring over vegies) Sprinkle parsley over everything. cover and bake at 350 degrees for 45 minutes.
BROCCOLI BAKE:
ingredients:
1/3 cup melted margarine
1 tsp. salt
1 cup grated cheese
1 cup milk
1 cup rice, cooked
a 10oz. frozen, chopped, cooked broccoli
1 small onion diced
Mix margarine, salt, cheese, egg, milk, and onion. Blend with rice. Add broccoli. Pour everthing into a buttered baking dish. Bake at 350 degrees for one hour.
