GAR! I love my vegetables very much <3

In our household, eveyone takes turns buying groceries and cooking meals. While most of my relatives seem to forget to cook their vegies, I usually don't. Sometimes the lack of vegies annoys me (and my tastebuds) and I do occassionally tell them that they need a healthier menu everytime they cook. Then a few days ago, my cousin (who loves his games and PS3) came up with a week-long challenge to cook meat-free meals. I was smiling thinking how I loved the idea. A week of purely vegies and tofu!..oh, with the exception of maybe poultry if absolutely neccessary. But whatever, sounds delicious in my dictionary. My cousin's wife was the first to go, and guess what she made? Vegie curry! Yum. Unfortunately, my cousin didn't share my sentiments. He regretted making that challenge cos he craved for his meat back! oh the irony of it all. But, I'm not ready to let him escape.

It was my turn next and I made sure there was no MEAT. emphasis on the meat, not protein. I looked through a holidy recipe booklet that my aunt sent over from the philippines (she's so sweet) and I found what i was looking for. TOMATO CASSEROLE! it was so simple and i couldn't wait to try it out! When I came home from school, I hurriedly went shopping, buying the ingredients that was 10 minutes away on foot. It was a work-out cos i had to bring a liter of milk and walk down and up the hill where our house was. However, once I started, everything was easy because majority of it was baking. (here goes the details of the recipe that I'm too lazy to write) When everyone was ready to eat, I took out the pans I baked the casserole in and set up the table. My brother was the first to comment about the taste and he said the cheese flavor was quite strong. I used a couple of layers of shredded mozarella but i didn't think i added THAT much to influence the taste. I guess I did cos I mirrored his thoughts after taking a bite, too. But still it tasted rather good. Not bad baking something for dinner for the first time. XD They liked it, I like it and we were all full. I have lots leftover and I want to eat some tomorrow. :P

This is one recipe I would like to do again! maybe even serve it to my parents when they come visit in September before school starts. my brother will most likely dish out his sushi for them.
Right now, I'm worried if my aunt and other cousin will cook something meat-less bec. they're not ones to stick to an idea if it doesn't benefit them. :(

Just a random fact, but when i was a kid I used to think I was a vegetarian because I ate a lot of vegies. Apparently I didn't know that if I ALSO ate meat it didn't really count. Nevertheless, I grew up liking a lot of vegies. I eat vegies when it's served and if no one else ate it, I did. In a study tour in China, me and my friends would take unfinished dishes from deserted tables and finish the food in it, vegie or not vegie. We loved the food served to us and we're cheapskates! I was raised not to leave dishes unfinished because it was a "waste" to do so. Do you know what they do to uneaten food? dump it! so why do that when the food could go to our stomachs where they can be properly used for their worth. But being the little brat that i was, i was still kinda picky with my food. I didn't eat fish with bones, chicken feet, squash, and mongo beans. ^^;
