Description and method: This lunch was leftovers from the night before. Water in a bottle that is apparently going to kill me, German potato salad, leftover buffalo chicken wings, and home made buns.
The wings were a little spicier than I like them and I found them very difficult to eat the night that I made them, but the leftovers were quite nice. German potato salad is a warm vinegar based salad. I really rather like it leftover cold the next day, although sometimes I still heat it up.
German Potato Salad
6 potatoes
6 slices of bacon
half an onion
1 TBS flour
3/4 cup water
1/3 cup vinegar
2 TBS sugar
1 tsp salt
pepper to taste
Cut your potatoes into bite size pieces and boil or steam them until just fork tender, don't overcook.
Fry your bacon (I pre-cut mine with a pair of kitchen shears and fry it that way) and crumble or cut after if needed and remove from the pan.
Dice and sauté your onion in the bacon fat until soft and translucent.
Add your table spoon of flour and cook for one minute just to take off the flour taste.
Add your water, vinegar, sugar, salt, and pepper.
Simmer a couple of minutes until gooey and pleasing, and then mix in your potatoes.
Enjoy!
(Side note: I'm allergic to onions so leave them out. I also really don't like pepper added to my food so leave it out. I've also made this having no bacon using one or two tablespoons of margarine/butter.)
