Yesterday's post made me want to cook for my daughter - it is how I say "I love you" when words won't do. So last night, I made risotto, her favourite. Woolies has a special on exotic mushrooms at the moment - shiitake, shimeji, enokitake, eringi (king oyster) - made a change from my usual portabellini. Some look like elf-caps and fairy ring mushrooms, all fused together. Others were huuuuuge, and meaty (or umami, I guess). I chopped the giants and kept the tiny ones for appearance. Sautéed them with olive oil and butter before adding them to the risotto, then served with chicken sautéed with peppers, tomato and basil.
It was divine - washed down, in my case, with a Franschoek Merlot. My daughter had grape juice. My wife, a homemade lemonade (thanks for the lemons, scrumptious).
