Day 281 since the 1st lockdown or Monday

I've got to the point where I don't know what the day is - apparently it's Bank Holiday Monday because Boxing Day was on a Saturday (so confusing). Yesterday we went for a long walk in the morning, then I made homemade soup from the leftover parsnips which was delicious. The afternoon was spent doing some chores and I had a meeting with the bellydance mentor and a bit of work for her. In the evening we had a veggie casserole made from savoy cabbage which was delicous with home made bread.

Today it was very frosty and sunny this morning so we went for a walk down to our local town to see what was open. Turns out most of what was allowed to be open was open apart from the banks and building societies which is what we were expecting. We had a look around some of the shops, everyone we saw was being very cautious - which I'm glad about as the numbers are still climbing where we live - today it's up to 6076 and increase of 3781 from last week which is really scary now (my borough has around 335,000 people). So after we'd finished we came home on the empty bus.

We have taken down some of the Christmas decorations today as having things like the advent calendars up seems a bit flat now. I've left the tree, the Christmas cards and the outside lights and decorations up and I'll probably take them down later in the week. It was good to get the place dusted and tidied up - we treated ourselves a sourdough pizza delivery for lunch because we could, and now we're catching up on TV stuff we recorded, finally catching up with the Supernatural last few episodes and we'll no doubt finish The Mandalorian later.

I often have leftover veggies and I love to make soup as that's so easy and delicious. The soup I made yesterday from the leftover roasted parsnips recipe serves 2:
1 onion, fried with 1 tablespoon of olive oil until softened, then add 1/2 teaspoon each of corriander seeds, cumin seeds, 1/4 teaspoon each of ground tumeric and mustard seeds and a crushed clove of garlic. Fry the spices until they start to smell amazing, then add around 340g of leftover roast parsnips cut into chunks. Toss around in the onion/spice mixture and then add 500ml of vegetable stock . Then liquidise - taste for seasoning (add salt/pepper if it needs it) and heat through again - add a little water if it's very thick. Just before serving stir in 1/2 tablespoon of lemon juice. Yum!

28 Do you usually make a special effort to thank someone who does you a favor? How do you react when you aren't thanked for going out of your way for someone?
Of course I thank someone whose done me a favour. I'm not that bothered if I don't get thanked by someone, but to be honest if the person doesn't thank me I won't bother to help out again....
