I am managing to avoid working on my research paper and any school work at the moment. Besides those two things occupying my time I needed to make an effort to deal with some of my CSA veggies. The past three weeks have been the "Summer Survivor" season so there isn't as much variety. Last night I cooked up 2 butternut squash and about 9 eggplants for freezing. I also blanched and froze some okra to give to my sister to pass on to her friend. There aren't a lot of people around here who like okra! This is kind of what I've had for the past few weeks:

There has been some arugula and I have NO clue what to do with it. Also, some Anaheim pepper. The first ones I got are hanging up to dry so they can be used at a later time. I have four in the fridge that I am hoping to make into Chile Rellenos if I can find a decent vegan version. There have also been some jalapeno peppers. The only thing I've ever really eaten with those are jalapeno poppers, so I figured I'd make some vegan ones. These jalapenos are so small (about an inch long) so it took quite awhile to get the seeds out and then to bread them three times. They came out REALLY tasty, but I only ate a few because I don't want to take a risk on my tummy. The rest will go to my brother.

Here is my Vegan Jalapeno Poppers recipe. There aren't exact measurements because it would depend on how much you are making.

jalapenos, cut in half lengthwise with seeds removed
Tofutti cream cheese
green onions, chopped
dried parsley
bread crumbs
flour
milk alternative

Carefully cut the jalapenos in half and remove seeds. BE CAREFUL not to touch sensitive areas such as your eyes while doing this or after. In a small bowl mix some Tofutti with some green onion and dried parsley. This is where I guessed about how much I would need. Fill each half jalapeno with the mixture. In two separate bowls put milk in one and flour in the other. Dip each jalapeno in milk then flour and let dry for 8-12 minutes. Repeat this process but use bread crumbs instead of flour. Let dry again. For the third breading I also added some panko crumbs to the mix. Finally, deep fry for a few minutes. It is important to watch them carefully as the oil will start to explode when the poppers start oozing out cream cheese. Drain on paper towel and enjoy!
