Best Meatloaf

Eric and I made the best meatloaf ever this weekend.



First, the creole seasoning:
3 tbs paprika
2 tbs course salt
2 tbs garlic powder
1 tbs ground black pepper
1 tbs onion powder
1 tbs cayenne pepper
1 tbs dried oregano
1 tbs dried thyme
Mix together and store in an airtight container. Makes 3/4 cup.

Now, the meatloaf:
1 lb ground beef
1/2 lb ground pork
2 large eggs, lightly beaten
1 medium onion, finely chopped
1 green bell pepper, ribs and seeds removed, finely chopped
1/2 cup heavy cream
1 cup plain dried bread crumbs
course salt and ground pepper
1 tbs creole seasoning (above)
1 chorico sausage
1/2 cup bottled chili sauce (we used Shaw's brand)

1. Preheat oven to 350 degrees.
2. Line a rimmed baking sheet with aluminum foil. Set aside.
3. In a large bowl, combine beef, pork, eggs, onion, bread crumbs, pepper, cream, 1 1/4 ts salt, 1/2 ts pepper, and creole seasoning. Gently mix.
4. Spray sheet with cooking spray. Place half of mixture on sheet and form into a 9x4 loaf.
5. Using a paring knife, remove the casing from the chorico sausage, keeping the shape intact.
6. Place the sausage lengthwise down the center of the loaf. Cover it with the rest of the meat mixture, enclosing the sausage and patting to adhere.
7. Brush chili sauce over the entire loaf. Bake for about 70 minutes. Let rest for 15 minutes before serving.

It is epically good. For real. Best meatloaf ever.
