Bailey Summers Killer Chicken:
This is a bit of a recipe and requires one special bit of hardware. That is a Beef syringe. You can get these at any farm supply place for injecting cattle or if you can find it a metal tipped baster will work fine.
The method is this, BBQ Sauce injected chicken that is then battered and fried. If you love BBQ and Fried Chicken this is right up your alley. All chicken used is cut pieces with the skin on. Brining the Chicken is optional.
Sauce as follows or use your own:
1 can of tomatoes blended.
1/4 cup of cider vinegar.
1/4 cup of molasses.
6 cloves of roasted garlic.
1 large onion caramelized.
2 bay leaves
2 sprigs of thyme.
1/2 cup of brown sugar.
1 teaspoon of smoked or regular paprika
1/2 teaspoon of cayenne pepper more if you like it hotter.
I recommend blending the garlic and onion with the tomatoes, you want a very smooth sauce. Let it cook 1 hour over med/low heat until it thickens.
Inject the chicken and let sit in the fridge for at least an hour overnight will not hurt it either.
Wet mix for breading: 1 egg yolk to every 2 cups of buttermilk.
Breading: This is a major cheat....2 cups of crushed up or regular graham wafers as crumbs, 2 cups of panco bread crumbs, 1 packet of southern fried shake and bake mix and 1 teaspoon of sugar, onion powder and granulated garlic plus liberal black pepper.
That's it. Enjoy.
PS you can inject wings with ranch dressing then fry and coat them for really neat buffalo wings.
