Meal Plan For the Week

[Edit to add the actual meal plan...which I've done four times now!]

Since everything but dinner is pretty consistent (lunch generally consisting of leftovers), here's the meal plan. Subject to change with a 3-day weekend planned for Jon's birthday/our anniversary:

1. Farm Stand Frittata with a big green salad

2. Nutty Chicken and Veggie Stir-Fry over Rice

3. Green Chile Chicken, serve over Mexi -Rice and add a big green salad

4. Herb Roasted Pork Tenderloin, with steamed green beans & mashed

5. Salmon with Salsa with steamed broccoli and a big green salad

6. Pepper and Dijon Steak, over spinach
