pumpkin cake recipe
I'm posting this recipe here so I never again lose it. This is a wonderful cake any time of year, but especially so around Thanksgiving and Xmas.
Pumpkin Cake
4 eggs
1 1/2 cups sugar
1 can pumpkin
1 can evaporated milk
1 3/4 cups milk
1 tsp salt
2 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1 box of yellow cake mix
1 stick of butter, melted
Mix all ingredients except cake mix and butter, and pour into a 9x13 pan.
Sprinkle with the cake mix, then pour melted butter over the top.
(Optional - Sprinkle with chopped pecans or walnuts.)
Bake at 350° F for 45 minutes, until topping is slightly browned.
Serve with a dollop of whipped topping.
